Use a sharp knife to cut the pumpkin in half and remove the seeds and fiber.
Leave the rind on while you cut the pumpkin into 1 to 2 inch cubes.
Place the pumpkin cubes into a large sauce pan and add water to a 1 inch depth.
Cover and bring to a boil.
Reduce heat and simmer for about 30 minutes until pumpkin is fork tender.
Drain well.
Cool until your pumpkin can be handled comfortably.
Remove the outside peel (Rind) and discard.
Mash or process the pumpkin in a food processor until it is well blended.
Drain your mashed pumpkin through a sieve or colander for about fifteen minutes to remove excess liquid.
